In the first quarter of 2019, we have completed two restaurants for the luxury sushi brand, Ran, in Beijing.
Two restaurants share a common kitchen.
One specialises in Japanese barbeque seafood and the other one is a sushi place.
For the barbeque part, we ditched away the traditional izakaya typology but adopted a market typology, in which from any table the patrons can enjoy and see the whole process how the live seafood is being prepared and served.
Whereas the sushi place, we inserted a modernised machiya and created a "yatai" dining experience in a tiny street in Edo period.
